The popular operators behind Dixon Park Beach's Sunnyboy Kiosk are set to bring their signature hospitality to the heart of Newcastle's foreshore. Thomas and Nova Carias-Cox have secured the lease for the new kiosk at Foreshore Park, promising a welcoming hub for families and park visitors when it opens its doors in late January.
Local Operators Bring Proven Track Record to New Venue
Thomas and Nova Carias-Cox are no strangers to the local food scene. Having grown up working in their family's business, the pair now successfully run three Morning Market Coffee locations in Whitebridge, Newcastle West, and Warners Bay, alongside their well-loved Dixon Park Beach kiosk. Their new venture, to be named Sunnyboy Park, will offer a relaxed, family-oriented menu featuring classic favourites like fish and chips, hamburgers, sandwiches, ice-creams, and quality coffee.
"We love the idea of creating a relaxed, welcoming spot where families can spend time, kids can play and everyone can enjoy great food and coffee in the heart of the park," Mr Carias-Cox said. He expressed genuine excitement about taking on the "special space in an incredible location," a feeling he believes will be amplified when the new inclusive playground opens nearby later in 2026.
A Key Milestone in Foreshore Park's Revitalisation
The completion of the new kiosk and its adjacent, fully accessible public toilet block represents the first major project delivered under the adopted Foreshore Park masterplan. City of Newcastle Asset Advisory Committee chair, Councillor Declan Clausen, said the facilities will significantly enhance the experience of visiting what is considered Newcastle's premier city park and major events space.
"The Harbour Foreshore is a major drawcard for Novocastrians and visitors from across the region and beyond," Cr Clausen stated. "Our adopted masterplan was guided by feedback from the community and represents a shared vision for this precinct."
The new amenities building, situated next to the site of the future regional-level accessible playspace, includes several important features designed for inclusivity:
- Unisex ambulant toilets
- A dedicated parents' change room
- A Changing Places facility for people who cannot use standard accessible toilets
Additional seating and a new connecting footpath will further integrate the space into the existing park layout.
Community Celebration and Government Support
A free community event to officially launch the new kiosk and facilities is scheduled for January 31. The celebration will feature family-friendly activities, live music, and complimentary treats and coffee.
The broader foreshore redevelopment has received financial backing from multiple sources, highlighting its community importance. Support has come from the NSW State Government, Variety the Children's Charity, the Touched by Olivia Foundation, and the Newcastle Port Community Contribution Fund.
Newcastle MP Tim Crakanthorp welcomed the progress, stating the government is committed to projects that deliver better public spaces. "Foreshore Park is a fantastic community space both for major events and for everyday enjoyment," he said. "It is great to see the new kiosk fall into the hands of local operators and I can't wait to grab a bite to eat at Sunnyboy Park."
With construction nearly finished, the arrival of Sunnyboy Park signals a sunny new chapter for one of Newcastle's most beloved waterfront locations, combining local business savvy with much-needed public infrastructure.
