Coles Broccolini Recipe Supports Eddie Betts Foundation

Coles is turning a quick and healthy side dish into a charitable cause with its latest Cooking With Coles recipe by Courtney Roulston. The recipe for grilled broccolini with cumin yoghurt not only offers a tasty addition to any meal but also supports the Eddie Betts Foundation. For every Coles Family Broccolini sold, 30 cents will be donated to the foundation, which focuses on helping Aboriginal and Torres Strait Islander children and young people.

Ingredients and Preparation

The recipe serves four as a side dish and requires just five minutes of prep time and 10 minutes of cooking. Ingredients include one Family Bunch Broccolini, two tablespoons of olive oil, sea salt flakes, 30 grams of butter, two cloves of garlic, a quarter cup of sunflower seeds, a quarter cup of pepita seeds, one tablespoon of white sesame seeds, one teaspoon of harissa paste (or tomato paste for a milder version), one tablespoon of fresh lime or lemon juice, one cup of plain Greek yoghurt, one teaspoon of whole cumin seeds (toasted and crushed), and two teaspoons of honey.

Cooking Instructions

To prepare, heat one tablespoon of oil in a large frying pan over medium heat. Add the broccolini and a pinch of salt, cooking for four to five minutes until tender and bright green, tossing occasionally. Add a splash of water if needed to steam. Remove from the pan and set aside. In the same pan, melt the remaining oil and butter, then add garlic and cook for one minute. Add the seeds and toast for one to two minutes. Stir in the harissa paste and fry for one minute until fragrant. Turn off the heat and squeeze in the lime juice. Mix the crushed cumin seeds, honey, and a pinch of salt into the yoghurt, then spread onto a serving plate. Arrange the broccolini on top and spoon over the garlic butter seed mixture before serving.

According to Coles, the donation from each broccolini sale will directly support the Eddie Betts Foundation, which aims to create opportunities for Indigenous youth through sport and education. This initiative combines a simple, nutritious recipe with a meaningful contribution to the community.
