The mastermind behind this dairy breakthrough is Graeme Carthy, a 70-year-old Quindanning farmer with deep roots in traditional dairy farming. Five years ago, Mr. Carthy made the strategic decision to diversify his operations by introducing a herd of 600 buffalo to his property. This move has now positioned him as Western Australia's sole buffalo milker, giving him unique access to what he describes as liquid white gold.

Laboratory analysis has revealed that Mr. Carthy's buffalo milk contains an impressive 8.5 percent fat content, nearly double the 4.5 percent typically found in standard cow's milk. This elevated fat percentage directly contributes to the ice cream's exceptionally smooth and rich texture, eliminating the need for additional cream or stabilizers that are commonly required in conventional ice cream production.

We deliberately avoided complicating the flavors with cookies, swirls, or excessive toppings, Mr. Huru explained. Our primary objective was to allow consumers to fully appreciate the superior quality and distinctive taste of the buffalo milk itself.

The debut collection features two carefully curated flavors designed to highlight the buffalo milk's natural characteristics:
